So - running Steam as Administrator seems to have been the key both to finding (and re-authorising) all my VSTis and getting rid of the erroneous 'Demo Mode' nonsense - all of which only became a problem after the new update to Windows 10. I've yet to see if this all holds up the next time I come back to it, but for now, all appears to be working fine (Omnisphere is behaving perfectly!). When I restarted this morning I waited for the OS to finish loading up then I began by starting Steam as an Administrator, then opening Sonar Pro from within Steam - amazingly, the programme didn't just (finally!) locate my most precious Spectrasonic VSTi's but also started up - correctly - as a paid monthly subcribscription.
